Sweet Potato Noodles with Creamy Cashew Alfredo

- 1 box of sweet potato noodles
- 1 tbsp olive oil
- 1/4 cup water
DIRECTIONS
- STEP 1. Heat olive oil in a large skillet over medium heat.
- STEP 2. Cook noodles for 2 minutes, stirring frequently. Stir in 1/4 cup water, and carrots. Cook for additional 3-5 minutes, until noodles are soft.
- STEP 3. Mix in the cashew alfredo and turn off heat. Top with roasted chickpeas and serve!
