This gluten free dessert will quickly become one of your favorites. I have made it so many times and everyone who has tried it instantly loves it. The apple cinnamon brownies are gluten and dairy free. They are packed with nutrients, fiber (16 grams only from the zen basil seeds) and protein. I used quite a bit of cinnamon because I love the taste and its health benefits. Cinnamon provides anti-bacterial and anti-inflammatory properties, curbs sugar cravings and lowers blood sugar levels. Enjoy these brownies for breakfast or dessert with a cup of your favorite tea.
Apple Cinnamon Brownies
Serves 8
INGREDIENTS
- 2 cups almond flour
- 1/2 cup monkfruit sweetener or coconut sugar
- 2 tbsp zen basil seeds or chia seeds
- 1 and 1/2 tsp cinnamon
- 1/2 tbsp baking powder
- 3 tbsp coconut or plain yogurt
- 1 tsp baking soda
- 2 eggs, whisked
- 2 apples, peeled, grated & water squeezed out
- 1 tbsp coconut oil, melted
- Coconut oil cooking spray
DIRECTIONS
- STEP 1. Preheat oven to 350 F or 180 C.
- STEP 2. In a large bowl, combine the almond flour, monkfruit, basil seeds, cinnamon and baking powder. Mix really well.
- STEP 3. In a small bowl, mix the yogurt with baking soda and let it rise (about 1-2 minutes). Add to the dry ingredients and mix well.
- STEP 4. Add the eggs, apples and coconut oil to the mixture and mix until well combined.
- STEP 5. Line an 8x8in pan with parchment paper and lightly spray it with coconut oil. Pour the mixture in and spread out evenly. You can decorate the cake with sliced apple, cinnamon or walnuts if you like.
- STEP 6. Bake for 25 minutes, until golden.
