Cinco de Mayo is a fun Mexican celebration that I love. It always consists of eating lots of tacos and drinking spicy margaritas. Let’s make this super fun Taco Tuesday a healthy one! Below I am including a few of my favorite recipes for different variations of tacos. I love using lettuce wraps and they are all so good! Have fun and get creative!
Beef Tacos
Let’s start with the classic beef taco in a tortilla shell. This recipe can be made in so many different ways. If you prefer not to use the gluten free tortilla, go for lettuce cups. I love making the tacos with lettuce as well if I am looking to cut back on carbs. As for the toppings… go for shredded lettuce, black beans, quinoa, shredded cheese, tomato salsa and guacamole.
Ahi Tuna Tacos
An absolutely delicate and refreshing taco you can serve for Cinco de Mayo. It is light, and yet incredibly delicious. Make sure to purchase sushi grade tuna!
Chicken Fajitas in Romaine Lettuce
These chicken fajitas are such a great alternative to the usual heavy carb-loaded fajitas. I skipped the beans, corn and tortilla wraps and instead used plenty of veggies and romaine lettuce hearts. The combination of fiber and protein will keep you full throughout the entire evening.
Vegan Jackfruit Tacos
These tacos will blow your mind. They seriously taste like chicken tacos and the ingredients are so awesome. Jackfruit is a fruit, that once cooked has a similar consistency to shredded meat. I like this exact product because the ingredients are plain and simple: jackfruit, onion, chili, vinegar, lime, sugar, sea salt, garlic, black pepper, cumin and coriander. You see… nothing out of the ordinary and the best part is that all you have to do is warm up the jackfruit in a skillet and dinner is served in 5 minutes.
Crab Taco with Mango Salsa
This fresh caught crab meat makes the perfect taco! The combination of mango and avocado packs in so much flavor, its really delicious!
