A healthy twist on the classic Shepherd’s Pie that is favored by many! I made my own version of the classic by using zucchini instead of peas, switching up the sauce and of course, replacing the mashed potatoes with cauliflower mash to lighten it up. This dish is packed with so much flavor and it’s so tasty. I like to serve it with a side of homemade tzatziki or vegan tzatziki if you are dairy free. The yogurt with cucumbers adds a refreshing crunch to this dish.
Low Carb Shepherds Pie
Serves 6
INGREDIENTS
- 1 tbsp extra-virgin olive oil
- 1/2 red onion, finely chopped
- 4 garlic cloves, minced
- 1 carrot, finely choppped
- 1/2 zucchini, finely chopped
- 1/4 lbs ground grass fed lamb
- 1/4 lbs ground grass fed beef
- 1/2 tsp cinnamon
- 1 tsp dry or fresh thyme
- 1/4 tsp turmeric
- 1/4 cup tomato sauce
- 1/4 cup hot water
- 2 tbsp chopped parsley or basil
- Sea salt & pepper to taste
For The Cauliflower Mash:
- 1 head cauliflower, chopped
- 2 tbsp Greek or vegan yogurt
- 1 tbsp vegan butter
- 1/4 tsp turmeric
- 1/4 tsp garlic powder
- Sea salt and pepper to taste
DIRECTIONS
- STEP 1. Preheat oven to 400 F or 200 C.
- STEP 2. Heat olive oil over medium heat in a large skillet and add the vegetables. Sauté for 3-5 minutes until they soften. Add the ground meat and spices. Using two wooden spoons break up the meat and continue stirring so it doesn’t form big chunks. Cook for 5-8 minutes.
- STEP 3. Add the tomato sauce, water, parsley and cook for another 5 minutes. Turn off heat and transfer to a 8in square baking dish.
- STEP 4. In a large pot, bring water to a boil and cook the cauliflower for 15 minutes, until soft.
- STEP 5. Drain the cauliflower and return the pot to the stove. Cook the cauliflower for 2-3 minutes uncovered to allow any left out water to evaporate. Transfer to a food processor.
- STEP 6. Add the yogurt, butter, spices and blend until well combined.
- STEP 7. Spread the cauliflower purée over the meat mix.
- STEP 8. Cook for 20-25 minutes, until golden.
- STEP 9. Serve while it’s hot with tzatziki sauce.
