Summer Salad With Oranges
Serves 4

- 2 cups baby spinach
- 1 ripe avocado, sliced
- 1 organic orange, peeled
- 3 green onions, chopped
- 2 tbsp sliced almonds
- 1 tbsp pomegranate seeds
Dressing:
- 2 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp maple syrup
- 1 tsp dijon mustard
- salt & pepper to taste
DIRECTIONS
- STEP 1. Mix the spinach, avocado, orange and onions. Top with pomegranate and almonds.
- STEP 2. In a small bowl, mix all of the ingredients for the dressing and pour over the salad. Serve chilled.
